Recipe : peanut and black rice salad

Ingredients
  • 2 cups black rice
  • ½ cup unsalted peanuts
  • 2 tablespoons olive oil
  • ¼ cup fresh lime juice
  • 1 cup chopped onion
  • 1 cup fresh cilantro and mint leaves
  • 1 cup orange (optional)
  • 1 tablespoon orange juice
  • Salt to taste
  • 6 thinly sliced scallions
Method
  • Add lime juice, orange juice, olive oil and salt in a bowl and whisk it together for the dressing.
  • Using double the quantity of water, bring the black rice to a boil and season it with a pinch of salt for about 25 mins. Remove from heat and let it rest for another 15mins before spreading it on a sheet to cool.
  • Now that all your ingredients are ready, all you must do is mix them all together and give it a good stir.
  • Drizzle the citrus dressing before serving and enjoy this wholesome meal.
